Gado-Gado, Traditional Peanut Sauce
If you are a fan of peanut butter, you will definitely enjoy this recipe. Gado-Gado is an Indonesian dish with an amazing spicy sweet peanut sauce, which served on either raw or steamed vegetables. The best part of the recipe is the great variety of vegetables you can come up with it, since the secret is in the sauce. I personally love to add tempeh or tofu and cook them in the sauce for a while.

Ingredients
1/2 cup finely chopped onions
Fresh ginger
3 garlic cloves
3/4 cup of Peanut butter
1tbsp Maple Syrup
The juice of 1 lemon
1 Apple cider vinegar
2 cups of water
Tamari
Spices: 1tbsp Cayenne pepper, salt, smoked paprika
Bay leaves
In a saucepan cook the onions , garlic, chopped ginger with a splash of water until brown
Add the rest of the ingredients and mix, add a bay leaf.
Let it simmer for 20min on low heat until it thickens
